Low-carb meals during busy days

Hi guys,

I haven’t been able to post anything lately (again) because I have some exams coming up and some other things going on – work and social stuff, like help planning a charity event – feel free to check it out: Taste of Asia )

Anyway, I’m still sticking to my diet most of the time (there are exceptions of course) and I’ve already reached my goal to reduce my weight by 2,8 pounds, but I’ve decided to keep going on with the diet anyway. I feel healthier having more veggie meals and low-carb days.

So here is a tuna-salad bowl I had for lunch:

I used canned tuna and spiced it up with some apple and cashews nuts. Add some corn salad, cherry tomatoes and rucola and a few drops of balsamic vinegar & olive oil and you’re done! It’s really quick and simple 🙂

Spicy Mango

I bought some mangos again, but this time they were pretty sour so I decided to make a spicy mango snack!

If you have an unripe mango that is green and still hard and crunchy just peel and cut it into little cubes and put them in a jar. Add a little salt and let it rest for about an hour. Then get rid of the juice that has accumulated in the jar. If you have chili powder mix it with some sugar before adding it to the mango. I didn’t have any so I just used a red chili pepper and chopped it into little pieces. I also added some spicy paprika powder because it smells nice and gives some extra color. Depending on how you like it, just add more salt, sugar or chili. I like it more sweet then salty, so I used twice the amount of sugar compared to the amount of salt.
Once you’ve put all the ingredients into the jar, close it, shake it and enjoy!

 

Mango Avocado Salad

Hey fellow foodlovers!

I’ve made my first salad creation today and I’m happy to share it! :

I’ve been reading some mango salad recipes and picked out some ideas but then I thought, well, that’s boring, let’s add some weird ingredients to it!

So here’s what’s in it:

1 ripe Mango   (1 quả xoài chín)
1 ripe Avocado   (1 quả bơ chín)
1 Tomato   (1 quả cà chua)
1/2 red Onion   (1/2 củ hành đỏ)
1/2 Lime   (1/2 quả chanh)
Salt & Pepper   (muối & hạt tiêu)
1 tsp Balsamic Vinegar   (1 thìa nhở dấm nho)
roasted Sesame & Peanuts   (vừng & lạc rang [cho thêm tùy ý thích])

Admittedly the sesame and peanuts didn’t really fit in, but the rest was yummy! If you don’t like onions, you can leave them out, too.
I was thinking of some olive oil actually, but then I forgot haha. Maybe next time 🙂
